Pumpkin Stew
Preparation Time: 25 minutes
Cooking Time: 4 hours
Serves: 8-10
Ingredients
- 2 pounds beef stew meat (cut into cubes)
- 3 tablespoons vegetable oil
- 1 cup water
- 3 large potatoes (peeled and cut into cubes)
- 4 carrots (sliced)
- 1 green bell pepper (chopped)
- 4 cloves garlic (minced)
- 1 onion (chopped)
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1 can whole tomatoes (peeled and chopped)
- 2 tablespoons beef bouillon granules
- 1 sugar pumpkin
Directions
- In a large saucepan heat 2 tablespoons of oil over a
medium-high heat. Put the beef and cook until browned.
- Add water, potatoes, carrots, green bell pepper, garlic,
onion, salt, pepper and mix.
- Allow the mixture to boil. Reduce the heat and simmer for 2
hours.
- Put the bouillon granules into the beef mixture. Stir in the
tomatoes.
- Preheat oven to 165 degrees Celsius.
- Cut the top part of the pumpkin and remove the pulp and
seeds.
- Put the
pumpkin in a baking pan. Fill it with the beef
mixture.
- Brush the remaining oil outside the pumpkin.
- Bake in the preheated oven 2 hours.
- Serve while hot.
