Pumpkin Stew

Pumpkin Stew

Serves: 8-10

Ingredients

  • 2 pounds beef stew meat (cut into cubes)
  • 3 tablespoons vegetable oil
  • 1 cup water
  • 3 large potatoes (peeled and cut into cubes)
  • 4 carrots (sliced)
  • 1 green bell pepper (chopped)
  • 4 cloves garlic (minced)
  • 1 onion (chopped)
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 can whole tomatoes (peeled and chopped)
  • 2 tablespoons beef bouillon granules
  • 1 sugar pumpkin

Directions

  1. In a large saucepan heat 2 tablespoons of oil over a medium-high heat. Put the beef and cook until browned.
  2. Add water, potatoes, carrots, green bell pepper, garlic, onion, salt, pepper and mix.
  3. Allow the mixture to boil. Reduce the heat and simmer for 2 hours.
  4. Put the bouillon granules into the beef mixture. Stir in the tomatoes.
  5. Preheat oven to 165 degrees Celsius.
  6. Cut the top part of the pumpkin and remove the pulp and seeds.
  7. Put the pumpkin in a baking pan. Fill it with the beef mixture.
  8. Brush the remaining oil outside the pumpkin.
  9. Bake in the preheated oven 2 hours.
  10. Serve while hot.
