
Pumpkin Fritters

Serves: 24 fritters
Ingredients
- 1 cup pumpkin puree
- 1 egg (beaten)
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon curry powder
- 1 teaspoon salt
- 4 cups vegetable oil
Directions
- Mix the pumpkin, egg, flour, baking
powder and curry powder in a large bowl.
- Add salt and stir.
- Heat oil in a deep saucepan.
- Drop batter by spoonfuls into hot oil.
- Fry until browned.
- Remove with a slotted spoon, and serve immediately.
