Pumpkin Fritters

Preparation Time: 5 minutes

Cooking Time: 10 minutes

Serves: 24 fritters

Ingredients

  • 1 cup pumpkin puree
  • 1 egg  (beaten)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • 4 cups vegetable oil

Directions

  1. Mix the pumpkin, egg, flour, baking powder and curry powder in a large bowl.
  2. Add salt and stir.
  3. Heat oil in a deep saucepan.
  4. Drop batter by spoonfuls into hot oil.
  5. Fry until browned.
  6. Remove with a slotted spoon, and serve immediately.
